FINE & RAW's chocolatier Daniel: After quitting his job as a financial analyst in New York, Daniel went in search of finding a chocolate that was both gourmet and healthy. Such a notion always had seemed like a myth to him. Across the world he traveled to bring back the power, creaminess and secrets of raw chocolate.
Daniel worked as a raw chef in the high desert of Arizona and perfected the art of chocolate back in New York. A sprinkle of adventure and creativity guided Daniel through his dreams and the ancient mysteries of cacao. He brought raw chocolate to life in a notorious Brooklyn loft. A cacao tree can produce close to two thousand pods per year. The ridged, football shaped pod, or fruit, of the cacao grows from the branches and, oddly, straight out of the trunk. The pods, which mature throughout the year, encase a sticky white pulp and about 30 or 40 seeds.
