OMG, this Chocolate Hazelnut Butter Cereal Cookies

When our local fans asked us to describe the gastronomic experience of these cookies, we knew we could only quote the epic words of the ancient philosopher, Aristotle: “Yum, yum, in my tum.” 

Like all good recipes, this easy peasy concoction is filled with pantry staples and one shiny and sparkly Fine & Raw product that you can conveniently purchase in our local Brooklyn spaceship or online shop. 

Bake them for yourself. Bake them for your crush. Bake them for your crew. Bake them for your ex under the guise of trading a tin of cookies for that comfy shirt you left behind. [Then: grab the shirt with your free hand before you have to hand over the cookies. Skateboard away from their apartment as fast as you can. Eat a cookie while you skateboard. You are free!!! And you got your shirt back. We celebrate you.]

P.S. Much like your favorite neighborhood yoga teacher, these cookies are crunchy, dreamy, vegan, and gluten-free.

Recipe:

Ingredients:

  • 8 oz. jar of Classic Fine & Raw’s Chocolate Hazelnut Butter Spread (found in our factory or online shop)
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ teaspoon espresso beans
  • ½ teaspoon Vanilla extract
  • 3-4 tablespoons almond milk
  • 3 tablespoons Cassava flour
  • Handful or two of cereal of your choice for additional crunchy munchy goodness

Supplies: 

  1. Two mixing bowls
  2. Measuring spoons 
  3. Spoons or whisks for stirring purposes
  4. Baking pan
  5. Baking paper/sheet

Instructions:

  1. Preheat oven to 350 degrees F.

  2. In your designated liquid ingredient mixing bowl, whisk soft, add Fine & Raw’s Chocolate Hazelnut Butter Spread, and almond milk.

  3. In a separate bowl, mix all dry ingredients (including the handful or two of cereal***) until well-integrated.

  4. Little by little, add bowl of liquid ingredients to bowl of dry ingredients and stir until all ingredients are well- integrated.

  5. The fun part: make your cookie balls (or squares, or triangles, who are we to judge?). Place these cookie creations on a baking pan lined with baking paper. Squish your cookies down to make them a little flat. Lick your fingers if you wanna.

  6. Bake for 12 to 14 minutes. Walk around the kitchen while you wait and sing a song about waiting for your cookies to be done. Post this song on TikTok if you simply must.

  7. Remove your tasty treats from the oven. Slow your roll and let them cool down before sampling.
    Google “motivational quotes about being patient” and whisper them to yourself several times.

  8. When cookies have cooled to room temperature, IT’S ON: party time.

  9. Enjoy with hot chocolate if you’re absolutely bonkers for choc. Or, try dipping your homemade cookies in a giant glass of your favorite plant-based milk.

  10. If you somehow don’t eat these all at once (lol, good luck) and are storing the cookies “for tomorrow” or “for a friend,” feel free to keep them in the fridge for better consistency and taste.
