Strawberry Soft Serve
This strawberry soft serve is almost too simple to warrant a recipe: just blend frozen strawberries with your choice of milk until silky and smooth. Ideal for a hot summer’s day where you want something cold and refreshing, but without much effort. The chocolate shell adds texture and a nice contrasting note of richness, and doesn’t require more than melting a bar of our chocolate with a touch of coconut oil.
Serves 2
1 cup frozen strawberries or fruit of your choice
⅓ cup milk of choice
½ bar Brooklyn Bonnie Raspberry
1 teaspoon coconut oil
Flaky sea salt to finish
To make the chocolate shell, add an inch of water to a small saucepan and bring it to a boil. Turn off the heat. Add the chocolate and coconut oil to a bowl fit on top of the saucepan, making sure that the bottom of the bowl doesn’t touch the water. Wait one minute to allow the chocolate to melt, then use a silicone spatula to mix the chocolate until it's thoroughly melted and combined.
Add the strawberries to a food processor and pulse until the texture resembles that of a granita, little snowflake sized pieces of fruit. Add the milk and blend until smooth.
Serve the soft serve immediately. Top with the melted chocolate - it will solidify on contact, and will completely set in about 30 seconds. Sprinkle with a pinch of salt before the chocolate fully solidifies.
